May is Foster Care month, so I thought I would share an experience I had with some very special children. In January, I was invited to DHR to host the occupational therapy session. I was a bit nervous because it had been awhile since I had taught children. Then I remembered one of my favorite books from my teaching days; The Rainbow Fish. It is a story about a beautiful rainbow fish with shiny scales. All of the fish loved his scales and asked the rainbow fish if they could have one but he told them “No”. This fish ended up lonely and without any friends. He was told to give away his scales if he wanted to have friends. When he shared his scales with the other fish, he made many friends. After one of the volunteers read the story, we made “Rainbow Fish” and sunflower cupcakes. The boys and girls learned piping skills and created their own designs. They were the most thoughtful children as they even made cupcakes for their siblings who were not old enough to participate in the session. What a sweet blessing this was for me as I received hugs from the children before they went home. To make the Rainbow Fish cupcakes you will need: Baked Cupcakes (that have been cooled) Buttercream Frosting Blue food coloring Coated Candy in assorted colors Candy Eyes Spatula Color the buttercream frosting with the blue food coloring. Ice each cupcake with the frosting using the spatula. Add the color coated candy in rows to make the scales and put two together for the mouth. Place one candy eye and then your fish is complete.
