In late June, my family and I took a mini vacation to Gatlinburg. It was a much-needed time of rest after the first part of my busy wedding season. We stayed in a cabin with scenic views for four wonderful days. We spent time taking in the sights with a horseback ride, visiting local eateries and distilleries, and touring the local aquarium. I did not know that Gatlinburg was the Pancake Capital of the South, so of course when I found out, we had to eat pancakes. I recommend the Big Apple Pancake with the apple syrup at the Atrium. The pancake was almost the size of the plate it was served on and large enough to share. It could be a meal all by itself. We spent one afternoon shopping at the Old Mill District and discovered the Old Forge Distillery. They offered free samples of their different moonshine flavors. For $2, you can sample the bourbon. The bourbon was aged for 10 years and delicious. I brought some home along with some chocolate moonshine cherries and immediately wanted to create a dessert with them. I decided to make a Bourbon Caramel Sauce. It’s so easy to make with only 4 ingredients.
