In late June, my family and I took a mini vacation to Gatlinburg. It was a much-needed time of rest after the first part of my busy wedding season. We stayed in a cabin with scenic view for four wonderful days. We spent time taking in the sights with a horseback ride, visiting local eateries and distilleries, and touring the local aquarium.
I did not know that Gatlinburg was the Pancake Capital of the South, so of course when I found out, we ate pancakes. I recommend the Big Apple Pancake with the apple syrup at the Atrium.
We spent one afternoon shopping at the Old Mill District and discovered the Old Forge Distillery. While there, I sampled the Bourbon while my hubby sampled the Moonshine. The Bourbon was delicious so I brought some home along with some chocolate moonshine cherries and immediately wanted to create a dessert with them. I decided to make a Bourbon Caramel Sauce. It’s so easy to make with only 4 ingredients.
Bourbon Caramel Sauce
½ cup butter
1 cup brown sugar
1/3 cup heavy cream
2 tablespoons bourbon
Melt butter in saucepan over medium heat. Add sugar and heavy cream. Stir frequently until sugar dissolves completely and sauce begins to thicken. Remove from heat. Add bourbon and stir. Serve over ice cream, your favorite dessert, or try it on our new “Old Fashioned” Cupcake.
